Chukka Recipe
Ingredients for Pepper Mutton Masala:
(Tsp- Teaspoon; Tbsp- Tablespoon )
Mutton - 500 gms (with or without bones)
Pressure cook mutton with
Turmeric Powder-1/2 tsp
Pepper Powder-1/2 tsp
Ginger Garlic paste-1 tsp
Salt-1 tsp
Oil- 1 tbsp
Water -150 ml
Whole Spices (lightly crushed):
Green Cardamom-4
Cinnamon-1 piece
Cloves-4
Black Peppercorns-8
Whole Spices:
Star Anise -1
Bay Leaf-2
Spice Powders:
Red Chilli Powder-1 tsp
Coriander Powder-2.5 tsp
Fennel Powder-1 tsp
Crushed Black Pepper-2 tsp
Other Ingredients
Curry leaves-15-20
Onions, chopped- 2 medium (150 gms)
Ginger Garlic paste-2 tsp
Tomatoes, chopped-2 medium (120 gms)
Green Chillies, chopped-2
Salt for seasoning- 1/2 tsp
Oil-3-4 tbsp
Preparation:
Pressure cook the mutton pieces with the items
specified for 4 whistles or till mutton is tender.
To pressure cook, keep it on high heat till the
1st whistle and then reduce the heat to low for
the balance whistles. Should take a total of 15-18
mins for the entire process
In case you don't have pressure cooker, cook
covered on low heat in a pan for 45-60 mins till
the Fine meat chop is the tender. onions & tomatoes amntnes and and chop chop the
green chillies.
Lightly crush the whole spices to be used for
tempering.
⁃ Also crush the black pepper for use later.
Process:
Heat oil in a wok/kadhai and add the crushed
whole spices. Give a stir and then add the Star
Anise & Bay Leaves
Give a stir and add the curry leaves
⁃ Again give a stir and add the chopped onions.
Fry on medium heat for 5 mins till onions are
translucent.
Add the ginger garlic paste, mix and fry on low
heat for 2 mins.
Now add the chopped tomatoes and fry on
medium heat for 2-3 mins.
Add all the spice powders (other than crushed
pepper) and 1/2 tsp salt & fry on medium heat
for 2-3 mins.
Now add the boiled pieces of mutton without
the stock.
Give a mix and add the chopped green chillies.
Fry on high heat for 2-3 mins.
Continue to sear on medium heat for 2-3 mins
till the mutton pieces are browned and oil
separates
Now add 100 ml of the stock give a mix and
cook on high heat for 2-3 mins till the stock is
absorbed.
Add 2 tsp crushed pepper, mix and fry on
medium heat for 2-3 mins.
Lastly add 2 tsp of lime juice and serve hot
