Baked Salmon with Tomatoes is a quick and easy heathy dish that your family is going to love! Tender salmon fillet baked in lemon butter with juicy garlicky tomatoes which makes it so moist and flavorful!

Baked Salmon with Tomatoes

Ingredients
1 1/2 lbs salmon fillet
4 tablespoons butter, melted
3 tablespoons lemon juice
Zest of 1 lemon
10 oz grape or cherry tomatoes, sliced in half
3 garlic cloves, minced
2 tablespoons olive oil

Directions
Preheat oven to 400°.
Combine butter, lemon juice and lemon zest together in a bowl.
Place salmon into a baking dish and season well with salt and pepper. Pour over mixture.
Sprinkle tomatoes around the perimeter of the dish and sprinkle garlic over the tomatoes. Season tomatoes with salt and pepper and drizzle over olive oil.
Bake for 15 minutes, until almost cooked through. Then place under the broiler for 3-5 minutes.
