Tornado watch and 70 mile an hour winds rocked our little Urban home. The next day was sunny but the winds were still violent and loud. We found interesting desert plant life scattered across the plains, and collected prairie sage in bundles. Later cozy inside our cottage core home, we cooked up some amazing zucchini walnut bread and an ancient grain recipe using Millet originally from China.

Millet:
Butter, garlic, onion, corn, or peas, bell peppers, shredded carrots, beans, sauté in pan.
Boil 1 cup millet in 2 cups water for 20 min.
Add 1 1/2 cups chicken or veg bouillon to veggies and simmer for 10 min.
Add the millet, cook for 10 min, add salt pepper and tomato puree.
Let stand 10 minute and enjoy.

Zucchini Bread:
beat 2 eggs, 1 cup sugar, 1/2 teas baking soda, 1/2 teas baking powder, 3 teas vanilla, 1 1/2 cup shredded zucchini, 1 cup flour, 1/2 teas salt, 1 1/2 teas cinnamon, mix very well.
pour into 9x9 pan lined with parchment paper and bake at 325 for about 30 to 40 minutes. enjoy!
