Today, I will be sharing with you my delicious Dhaba Style Mix Vegetable recipe. This authentic Pakistani dish is packed with a variety of vegetables and spices, creating a burst of flavors in every bite. The combination of textures and aromas will leave you craving for more. Follow along as I take you through the steps to recreate this flavorful dish in your own kitchen.

Ingredients for Dhaba Style Mix Vegetable:

• 1.5 cups cauliflower florets
• 1/2 cup sliced carrots
• 1/3 cup green peas
• 1 large sized potato, peeled and diced
• 1 medium sized onion, finely chopped
• 1 tablespoon ginger-garlic paste
• 1/2 cup tomato puree
• 1/2 teaspoon turmeric powder
• 1 teaspoon red chili powder
• 1/2 teaspoon paprika powder
• 1 teaspoon coriander powder
• 1 teaspoon kasuri methi (dried fenugreek leaves)
• 1 teaspoon Salt or to taste
• 1 teaspoon lemon juice
• 1/8 cup yogurt
• 1/2 cup water
• 1 green chili, chopped
• Fresh coriander leaves, chopped for garnish
• 1/4 cup ghee for cooking

Instructions:

1. Heat ghee in a wok over medium heat.
2. Add the chopped onions and sauté until they turn golden brown.
3. Add the ginger-garlic paste and sauté for 20 seconds.
4. Add the tomato puree, red chili powder, paprika powder, turmeric powder, coriander powder, salt, kasuri methi and cook for 2-3 minutes or until the oil starts to separate from the masala.
5. Add yogurt and cook for a minute.
6. Add cauliflower florets, diced potato, sliced carrots and green peas. Mix well to coat the vegetables with the masala.
7. Add 1/2 cup of water. Mix well and bring it to a boil.
8. Cover and cook on low heat for 30-35 minutes or until the vegetables are fully cooked.
9. Once the vegetables are cooked, add lemon juice, chopped green chili, chopped coriander leaves and mix well.
10. Serve hot with roti or rice.
