📋 INGREDIENTS:
Rice:
• 2 cups jasmine rice
• 2 cups water
• 1 cup coconut milk
• 1 tsp salt
Meat:
• 600 g chicken breast (approx. 1.3 pounds)
• Salt
• Black pepper
• Olive oil
• 3 cloves of garlic
• 2 cm ginger (approx. 1 inch)
• 4 teaspoons red curry paste
• 1 tbsp fish sauce
• 1 tbsp coconut blossom sugar
• 1 red pepper, cut into strips
• 200 g sugar snap peas (about 7 ounces)
• 400 ml coconut milk + rest of the can (approx. 1.7 cups + rest of the can)
• 2 tsp corn starch + 2 tbsp water
• Lime juice
• Parsley, finely chopped
• Basil
• Chili flakes
