This Coffee Ice Cream is creamy and delicious. Surprisingly, this ice cream taste is more for adults, but it pleases both children and adults.
Ingredients:
1 1/2 cups whole milk / 375 ml
3/4 cup sugar / 150 g
1 1/2 cups whole coffee beans / 125 g
A pinch of kosher or sea salt
1 1/2 cups heavy cream / 375 ml
5 large egg yolks
1/4 teaspoon pure vanilla extract
1/4 teaspoon finely ground coffee
Heat the milk, sugar, whole coffee beans, salt and 1/2 cup (125 ml) of the cream in a medium saucepan. When the mixture is hot, cover, remove from heat and let stand for 1 hour. Reheat the coffee-infused milk mixture. Pour the remaining cream (250 ml) into a large bowl and place a mesh strainer over it. In another medium bowl, beat the egg yolks. Slowly pour the hot coffee mixture into the yolks, whisking constantly, then scrape the hot yolks into the saucepan. Stir the mixture constantly with a heatproof spatula over medium heat, scraping the bottom while stirring, until the mixture thickens and coats the spatula. Strain the custard through a sieve and fold into the cream. Stir in the vanilla and ground coffee. Chill the mixture in the refrigerator and then you can freeze it or put it in an ice cream maker, following the manufacturer's instructions.
