Super tasty chicken curry! Simple, quick & absolutely delicious!
Ingredients:
1 large onion
4 cloves of garlic
1 large piece of ginger (equals about 3 tablespoons)
3 chicken breasts
2 tbsp ghee or olive oil
2 tbsp tomato paste
2 tbsp Indian curry powder
1 teaspoon garam masala
½ teaspoon coriander
400g chopped tomatoes
400 g coconut milk
preparation
1. Peel and chop onions, garlic and ginger. Cut chicken into bite-sized pieces.
2. Heat ghee or olive oil in a large pan and sauté onions, garlic and ginger. Stir in tomato paste, curry powder, garam masala, and coriander and fry for 30 seconds.
3. Add chopped tomatoes and coconut milk and bring to the boil. If necessary, season with salt and sugar. Then add the raw chicken and let it cook over medium low heat for about 15 minutes.
4. Garnish with a few coriander leaves and serve with rice.
