Ingredients:
1 medium-sized raw mango (kairi), peeled and chopped
2 tomatoes
1 lemon
1/2 cup fresh coriander leaves
1/4 cup fresh mint leaves
2-3 green chilies (adjust according to your spice preference)
1-2 cloves of garlic
1 teaspoon roasted cumin powder
Salt to taste
Red chilli flakes
Water as needed

Instructions:

Preparation:
Start by washing and roughly chopping the coriander leaves and mint leaves. Peel the raw mango and chop it into small pieces.

Blending:
In a blender or food processor, combine the chopped raw mango, coriander leaves, mint leaves, green chilies, tomatoes, and garlic. Add a little water to help with the blending process.

Seasoning:
Add the roasted cumin powder and salt to the blender. Blend all the ingredients into a smooth paste. You can adjust the consistency by adding more water if needed.

Adjusting Flavor:
Taste the chutney and adjust the salt, or red chili flakes and lemon juice according to your preference.

Serving:
Transfer the chutney to a serving bowl. You can garnish it with a few coriander leaves or a sprinkle of roasted cumin powder.

This chutney can be stored in an airtight container in the refrigerator for up to a week.

Variation:
You can add a few teaspoons of lemon juice to enhance the tanginess.
