Simplified Hot and Sour Glass Noodles Recipe #SuanLaFen

Here's my simplified version of the famous Sichuan dish. All in just one pan/wok and using easy-to-find ingredients. This serves 3 skinny legends or 2 regular people or 1 really hungry fellow (I'm that fellow).

INGREDIENTS:

~ Sweet Potato Noodles (You can find them in your Asian store or online)
~ Garlic (2-3 or as much as you like)
~ Green onions (as much as you like)
~ Chili flakes, as much as you like (skip if you have chili oil ready but like I said, it's a simplified recipe, perfect for those who don't have chili oil lying around)
~ Cooking Oil (depending on your health preference, but make sure it's enough to submerge the garlic and chili flakes)
~ 1 liter of water
~ 2 chicken bouillon cubes (it's cheaper than a box of chicken broth)
~ 2-3 tablespoons of light soy sauce (according to your taste)
~ 1-2 tablespoons of black vinegar (according to your taste)
~ Sichuan Peppercorn powder if you want it extra spicy and numbing. Otherwise, skip.

Additional optional ingredients:

~ Hard boiled eggs (I mean, every Chinese Suan La Fen mukbang videos have hard boiled eggs so why not)
~ Fried Peanuts (just buy them ready to eat to save time)
~ Bok Choy (if you want fresh vegetables) or Zha Cai/Pickled Mustard Stems (if you're into pickled vegetables)

HOW TO COOK:

1. Boil some eggs in advance, for 7-10 minutes or depending on how you want the yolk to be. While it's boiling, you can take the time to chop your vegetables and aromatics. If you're using bok choy, blanch it for a few seconds in the same boiling water.
2. In the same wok/pan, add in your cooking oil, garlic, chili flakes and Sichuan peppercorns if you have them.
3. Once fragrant, add water and the bouillon cubes. Then the light soy sauce.
4. Once the broth boils, add in your noodles. Cook for about 5-6 minutes, depending on how you like your noodles. Stir occasionally.
5. You can peel the eggs while waiting for the noodles to cook.
6. After 5-6 minutes, turn off the heat and add in the black vinegar. Never pour the vinegar while the water's boiling or cooking because it will evaporate.
7. Pour in the noodle soup into bowls or one big bowl and garnish with them toppings. That's all.
