Mouth watering Goan Stuffed Mango Pickle!

Ingredients
1Kg raw mango
1 Tbsp mustard seeds
1 Tbsp mustard dal
1 tsp fenugreek seeds
10 Pepper corns
1/2 tbsp Kashmiri chilly powder
1 tsp asafoetida (Hing)
1/2 cup regular oil
2 Cup mustard or sesame oil
Plenty of Salt

Method
1. Clean the mangoes and dry them with a cloth
2. Apply cut on the mangoes as shown in the video and put salt evenly and keep aside (Keep moving the raw mangoes upside down in every 2 days by adding more salt for a week)
3. After a week separate the brined mangoes and the salt water.
4. Strain the salt water making sure no particles are left in the water.
5. Boil the salt water and reduced it to half and let it cool down at room temperature.
6. In a pan heat the vegetable oil and fry the mustard seeds, mustard dal, turmeric powder, hing, pepper corns and the fenugreek seeds
7. Blend both the mustard and fenugreek seeds coarsely but not into a powder and keep aside
8. Heat both the mustard / sesame oil and the regular oil, and keep till it cools down
9. Grind the chillies to coarse powder.
10. Mix the chilly powder, mustard and fenugreek powder, the mustard dal, turmeric, hing all together
11. Add the reserved salt water little by little in the masala. Also add 2 tbsp of the oil into the masala
12. Fill the brined mangoes with the masala nicely
13. Preserve into a glass sterilized jar to mature, consume after 1-2 weeks
