Badjack Potato salad

2 # Red potatoes, cleaned and skin left on
1 C Mayonnaise
1 T Yellow mustard
4 ea. Celery stalks, small dice
1/3 C Red onion, small dice
1 ea. Garlic clove, minced
½ C Bread & butter pickles, small dice
8 ea. Bacon strips, cut into lardons
2 T Badjack hot sauce
TT Salt & pepper

1. Put the cleaned potatoes in a pot cover with water, with a couple inches over them. Add 1 tsp or more of salt to them. Boil for 15-20 minutes, depending on their size until tender. When a knife will go easily into them
2. Dice up each of the vegetables up and put the into a large mixing bowl. Then measure out all your other ingredients. Set as side till potatoes are done.
3. Cut your bacon into lardons. Cook until crispy in a pan. Drain off the extra bacon grease. Put the bacon on a paper towel lined plate to drain of the extra grease. Set aside until the potatoes are done.
4. Once the potatoes are done. Drain off the water. Then place into a mixing bowl on a mixer or in a large bowl. In a mixer, take the paddle attachment and mix on a slow speed until the potatoes are broken up, but not mashed potato consistency.
In a mixing bowl. Take a fork, your hands, or a large spoon. Break up the potatoes to the size you like.
5. Once the potatoes are broken up to the sized you like. Now add the rest of the ingredients. Mix well to distribute everything evenly in the salad. Season with salt & pepper. Taste and adjust to your liking. Serve or cool in the refrigerator.
