Lemon Basil Cream Sauce- Easy and Keto!

Looking for a way to elevate your meals? Want to add some flavor to your chicken, seafood, or veggies, AND maintain a low carb/keto lifestyle?

Give this sauce a try!
It's easy (5 ingredients plus seasoning).
It's quick (total time needed to prep is ~ 5 minutes. Total cook time is ~ 15 minutes).
More important, it's delicious!

Ingredients:
4 C heavy cream
~ 1.5 large shallot, diced fine
~ 20 fresh basil leaves, fine mince
zest and juice of 1.5 lemons
2 tablespoons of butter to saute the shallots and 2 tablespoons of butter at the end to help emulsify the sauce
~ half to 1 teaspoon of salt

Melt 2 T butter in a large frying pan under medium heat.
Add shallots and stir.
When shallots are translucent (~ 3 minutes).
Add cream.
Turn heat up to high.
Stir continuously while scraping the sides of the pan.
After cream has reduced by ~ 1/3, add salt and minced basil.
Once cream mix has reduced by ~ half, turn off the heat and add lemon juice and zest. Stir to incorporate.
Add remaining butter. Stir to incorporate.
Taste and adjust seasoning as needed (prn for those that know)

Enjoy!

I had this sauce for dinner this evening with shrimp and cauliflower.
Defrost shrimp then pat dry and season with salt and pepper.
Heat frying pan with some butter
Drop in seasoned shrimp into the pan with the butter.
After ~ 1 minute, flip shrimp.
Add sauce to heat and cover the shrimp.
Add steamed cauliflower to the pan and toss to incorporate.
Adjust seasoning prn.

Delish!
