Lime Basil Marinade-Keto and Quick!

Looking for a way to elevate your grilled chicken? Need another keto friendly salad dressing? Tired of the mystery ingredients that are found in commercially prepared salad dressings?

Give this fresh mix a shot!

Ingredients:
3 scallions, rough chop
3 cloves peeled garlic
~ 20 leaves of fresh basil
~ 1.5 cups of full fat Greek yogurt
Zest and juice from 1 large lime
~ 3 ounces of rice vinegar
splash of avocado oil
~ half teaspoon of salt, to taste

Drop everything into a bullet blender, blender, food processor and mix until thoroughly incorporated.
NOTE: If you don't happen to have a blender, no problem! Just fine dice the solids and mix everything together in a bowl. The blender just saves some time.

NOTE: I used this marinade for some boneless, skinless chicken that I had available. The amazing thing about this mix when used as a marinade is that the base of Greek yogurt means that the flavor can penetrate the protein more readily. There's something magical that happens with the enzymes and acid from the yogurt to help make this happen.

The chicken I made only had ~ 6 hours of time to marinade before getting cooked and it was super flavorful. If using a commercially available vinaigrette type salad dressing, you'd need a full day of soaking to get similar levels of flavor into the protein.
