Keto Smoked Mini Meatloaves

What could be better than keto meatloaf? Smoked keto meatloaf, mini version!

The format for these isn't super important. What IS important is that these meatloaves are keto and that they get cooked in the smoker.

There is something truly magical that happens when you cook things in a smoker. This dish is THE example of that statement. Meatloaf is totally fine when baked in the oven. It becomes something spectacular when cooked in a smoker. So, let's make some meatloaf!

Ingredients:
3 lb of 80/20 ground beef
2 one pound packages of bulk breakfast sausage (e.g., Jimmy Dean, etc)
~ 2 cups of diced onion
~ 1 cup of your favorite BBQ rub
3 eggs (mixed)
~ 1 cup of Parm cheese (the kind in the green container, not the pricey stuff)
I added 2 teaspoons of garlic powder because the rub I was using needed a bit of a boost.

Mix all ingredients thoroughly, then form into softball sized shapes.
Dust with a bit of rub.
Place on a wire rack and toss into the pre-heated smoker.

NOTE: Be sure that the smoke that's coming off of the smoker is the thin blue smoke. For the first ~ 30 minutes or so, the smoke that comes out of the cooker can be nasty and impart an acrid flavor to whatever you're cooking. Let that first bit of smoke dissipate and then start filling the cooker with goodies!

Cook until done (~ 165F)

Let rest for 5 or so minutes, then enjoy!
