My recipe is .. Per serve
80 grams of fettuccine (egg based pasta)
15 grams of parmigiano reggiano cheese
or 50/50 Pecorino reggiano and Parmagano reginano, both 24 month aged.
50 grams of Bacon .. go for guanciale if you can find it
1 egg yoke
.5 gram of black pepper
and a dash of extra virgin olive oil when served.
