Ingredients:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup unsalted butter, melted
1 cup milk
2 large eggs
1 cup fresh spinach, chopped
1/2 cup crumbled feta cheese
1/4 cup grated Parmesan cheese
1/4 cup chopped sun-dried tomatoes (optional)
2 tablespoons chopped fresh basil or parsley (optional)
Instructions:
Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper.
In a separate bowl, whisk together the melted butter, milk, and eggs until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Gently fold in the chopped spinach, crumbled feta cheese, Parmesan cheese, sun-dried tomatoes (if using), and chopped basil or parsley (if using), until evenly distributed throughout the batter.
Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
