ingredients:
1 large onion
4 medium potatoes
5-6 large eggs

Spices and oil:
2/3 cup (160 ml) olive oil
Salt

Instructions:
1. Heat a non-stick frying pan on medium heat and pour into it
2/3 cup/160 ml extra virgin olive oil.

2. Add 1 large onion to the pan. Stir to make sure all the onions are coated with the olive oil and let them cook in the oil.

3. Peel and wash 4 medium potatoes. Cut them into pieces.

4. After cooking the onions for about 4 minutes until they become transparent, add the chopped potatoes to the pan. Mix until the potatoes are coated with olive oil. Stir every 3 minutes to ensure even cooking.

5. While the potatoes are cooking, crack 5-6 large eggs into a large bowl. Stir them until well combined.

6. When the potatoes are cooked for about 20 minutes and have a golden fried color, remove the pan from the heat. Put the potatoes and onions in a bowl with the eggs (strain the olive oil to use again). Season with plenty of sea salt and mix until well combined. Set aside for 15 minutes.

7. Heat an 8-inch/20 cm skillet over medium heat. Pour the egg and potato mixture into it so that it becomes a smooth and single layer. Run a spatula around the outer edges.

8. Cook for 3 minutes on medium heat. Time to flip the tortillas: Place a plate on the pan, flip the tortilla onto the plate, then return it to the pan. Fry for another 2-3 minutes. Use the back of a spatula to press the tortilla from the outer edges toward the center to create a rounded edge.

9. After the tortilla is completely cooked (in our case, the center is slightly moist), remove the pan from the heat and transfer it to a serving dish. Enjoy this delicious dish and enjoy! Mm.. delicious 😋
