0:19 Preparing the berries:
40g starch. 70 ml water.
400g blackberries. 100g sugar.
Grind with a blender.
Strain through a sieve.
Add starch and cook until thick.
Cover with stretch film and let cool.
2:55 Preparation of the meringue:
1/2 lemon.
200g egg white.
Gradually add 300 g of sugar.
1 tablespoon lemon juice.
25g corn starch.
Bake in a 40 x 35 cm pan in an oven preheated to 150 °C for 30-35 minutes.
5:13 Preparation of the cream:
400 g mascarpone cheese or cream cheese.
50g powdered sugar. 100 ml cream 33%.
Add the berry mixture to the cream.
Assembling the meringue roll.
Grease the roll with cream.
6:17 Roll up the roll and put it in the fridge for 3-4 hours.
Trim the edges.
Decorate the meringue roll with cream.
