Step by step :

In a small saucepan, combine equal parts water and vinegar.
2. Add sugar and salt to taste. Bring the mixture to a boil.

4. Pour the hot vinegar mixture over the ginger slices, making sure to cover them completely.
5. Allow the ginger to cool to room temperature, then seal the jar and store it in the refrigerator.
6. The ginger will be ready to eat in about a week, and will keep for several months in the refrigerator.
