The best apple slices made from puff pastry

Delicious puff pastry cut with a filling of apples and vanilla with a touch of cinnamon
Recipe:
1 roll of XXL puff pastry (375-400g/ 13-14oz)
1 pack of vanilla pudding powder
1 large apple (or 2 small ones)
1/2 teaspoon cinnamon
250ml/8.4fl. oz water or apple juice
1 egg yolk
Sugar as desired
Almond leaves
powdered sugar

Bake:
20-25 minutes at 180 degrees / 350F
at top bottom heat
