This recipe is perfect for a quick and easy weeknight dinner, and it's also a great way to sneak in some extra veggies into your diet. Chicken Pasta Recipe:

Ingredients:

For the pasta:

4 cups penne pasta
12 cups water
2 tablespoons oil
1 tablespoon salt

For the chicken:

500g boneless chicken
3 tablespoons oil
1/3 cup chopped spring onions
1 tablespoon chopped ginger garlic
1/2 teaspoon paprika powder
1 teaspoon black pepper powder
1 tablespoon chili sauce
1 tablespoon soy sauce
1 teaspoon salt
1 cup tomato puree
1/2 cup tomato ketchup
1/2 cup chopped green and red bell pepper
Chopped green onions (for garnishing)

Instructions:

1. Add water, oil and salt in a pan. Stir well and bring it to a boil over high heat.
2. Add the penne pasta to the boiling water and boil the pasta until al dente about 10-12 minutes, or according to package instructions.
3. Drain the pasta and rinse it with cold water.
4. Drizzle some oil over the pasta and mix well. Set it aside.
5. Heat 3 tablespoons of oil in a wok over medium heat.
6. Add the chopped spring onions, chopped ginger garlic and saute for a minute.
7. Next, add the chicken to the wok and cook until it changes color.
8. Add paprika powder, black pepper powder, chili sauce, soy sauce, salt, tomato puree and ketchup. Mix well and cook on medium heat for 3-4 minutes.
9. Add the chopped red and green bell pepper. Cook for 1-2 minutes.
10. Add the boiled penne pasta to the wok and mix well.
11. Garnish with chopped green onions.
12. Serve chicken pasta hot and enjoy!
