A quick Italian breakfast at home! Amazing Frittata with eggplant and mushrooms in a tortilla!
Hello friends! I want to share with you my delight in one amazing dish, which gives me an irresistible desire to cook it again and again. Today I will tell you about an Italian breakfast recipe - frittata. But this will not be a traditional Italian frittata. Ready for a culinary experiment? We'll make it a little unusual, we'll wrap it in a tortilla and put some grib and eggplant in the filling! And in the end we will get a frittata that is somewhat similar to a quesadilla. This culinary masterpiece is incredibly easy to prepare, and at the same time, incredibly nutritious, which makes it ideal for a large and friendly company. The recipe for this dish appeared in my cookbook quite recently, however, it has already become one of the most significant and popular on our dinner table. I have no doubt that you will enjoy this unusual, magnificent and aromatic frittata. To prepare this dish, you only need a few available ingredients and very little time. The result is a great breakfast, lunch or dinner with stretchy cheese, juicy vegetable filling and crispy tortilla. Try this recipe and share your impressions in the comments.

INGREDIENTS AND RECIPE:
1 eggplant
1 teaspoon salt
Olive oil
5-6 mushrooms
Green onions
1 tomato
100 grams of cheese
3 eggs
Salt
Black pepper
1. Cut 1 eggplant into rings, add 1 teaspoon salt, mix well and pat dry with paper towel
2. Fry the eggplants in olive oil on both sides and set aside.
4. Cut 5 mushrooms into slices, fry on both sides and place on a plate.
5. Finely chop the green onions and place in a bowl.
6. Finely chop 1 tomato and place in a bowl.
7. Finely grate 100 grams of cheese and set aside.
8. Break 3 eggs into a bowl, add salt, pepper and mix well.
9. Pour olive oil into the pan and add half the eggplant.
10. Pour in 1/2 of the egg mixture and place 1/2 of the mushrooms on top.
11. Add 1/2 tomato, sprinkle with green onions and add 1/2 cheese.
12. Place the flatbread on top, carefully turn it over, fry it a little and fold it in half.
13. Repeat the same with the remaining ingredients.
An unusual, crispy and at the same time juicy frittata in a tortilla is ready! Enjoy the taste! Bon appetit!
