Onion and Lamb stew

Ingredients
1 tbsp olive oil
1.5lb cubed stewing lamb
1 onion, thickly sliced
2 carrots, thickly sliced
chicken stock
2 cups white beans, rinsed and drained
4 cloves garlic chopped
2 bay leaves
salt and pepper
