Irish Potato Pancakes! | Alirien Crafts Boxty for Imbolc

For Imbolc, also called Brigid's Day or Candlemas, we made boxty, which is a traditional Irish pancake recipe using potatoes. We made our version loaded potato style with sour cream, cheese, and bacon!
