Sm simple recipe for bamboo chicken:

Ingredients:
- 500 grams of chicken (cut into pieces)
- 1 cup of bamboo shoots (sliced)
- 2 onions (finely chopped)
- 2 tomatoes (chopped)
- 2 green chilies (sliced)
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala powder
- Salt to taste
- Oil for cooking
- Fresh coriander leaves for garnish

Instructions:
1. Heat oil in a pan and sauté the chopped onions until they turn golden brown.
2. Add the ginger-garlic paste and green chilies. Cook for another minute.
3. Add the chopped tomatoes and cook until they become soft and mushy.
4. Now, add the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a couple of minutes.
5. Add the chicken pieces and bamboo shoots to the pan. Mix everything together so the chicken is well coated with the masala.
6. Cover and cook on low heat until the chicken is tender and cooked through, stirring occasionally.
7. Once the chicken is cooked, sprinkle garam masala powder and garnish with fresh coriander leaves.
8. Serve hot with rice or chapati.
