Ube Velvet Cake (Purple Velvet Cake) Easy Recipe

Ube Cake is a traditional Filipino chiffon cake or sponge cake made with ube halaya. It is distinctively vividly purple in color, like most dishes made with ube in the Philippines.
Dioscorea alata, also known as purple yam, ube, or greater yam, among many other names, is a species of yam. The tubers are usually a vivid violet-purple to bright lavender in color, but some range in color from cream to plain white.
So today we're making Ube Velvet Cake with fluffy ube sponge cake with ube jam spread and ube cream cheese frosting.

Here's what you'll need:
4 egg yolks
1/3 cup sugar 67g
1/4 cup vegetable oil 50g
1/3 cup milk 67ml
1 tsp vanilla 5g
1 cup all purpose flour 125g
1 tsp baking powder 5g
1/2 tsp salt 3g
2 tbsp ube flavoring or essence 10g
1/4 cup ube halaya/ ube jam
4 egg whites
1/2 tsp lemon juice or vinegar
1/3 cup sugar

Frosting:
1 and ½ whipping cream (cold)
2 tbsp sugar 10g
1/4 cup cream cheese 50g
1 tbsp ube flavoring
