INGREDIENTS.
Homemade vegetable broth recipe.
For a 5 liter pot I put these vegetables:
1 onion.
1 tomato.
3 garlic cloves.
2 leeks.
Half a pepper, green or red.
White wine, half a glass.
4 carrots.
A piece of pumpkin (350 - 400 g).
A branch of parsley.
Dehydrated Kombu seaweed, 2 or 3 g.
Olive oil.

I usually don't add salt or spices. I prefer to do it in the final recipe, depending on the ingredients I use.

What vegetables can I use to make broth?
A stem of broccoli is a fantastic way to get the most out of this vegetable.
Leaves and central stem of cabbage.
Turnip.
The green leaves of cauliflower.
If you want your broth to come out green, add peas to a cooking bag and then mash the peas with broccoli instead of orange vegetables.

This vegetable broth is perfect to use in stews and stews, whether they are meat, chicken or vegetables. Rice dishes also improve a lot with a base broth.
