Italian Style Aubergines. An original Italian inspired recipe. Aubergines stuffed with tasty a filling of rice, minced beef, onion, red pepper, herbs and seasoning. Topped with a creamy sauce and finished with oozy, melted cheese. The recipe serves 3 for a main course or 6 as a side dish.

Ingredients:
Aubergines and stuffing -
3 Medium to large aubergines
1/2 Red pepper (chopped)
1 Onion (chopped)
2 Cloves of garlic
Chopped fresh basil and parsley
2 Tablespoons of olive oil
300mg Minced Beef (or Vegetarian alternative)
250ml Vegetable or Beef stock
3/4 Rice
Salt & Pepper to season

Sauce -
2 Heaped tablespoons of butter
2 Heaped tablespoons of plain flour
400ml Evaporated milk (e.g. Carnation)
1/4 tsp Salt
1/4 tsp Ground Black Pepper

Topping -
1/2 - 1 Cup of grated mozzarella & cheddar cheese
Chopped fresh parsley for garnish
