Introduction :

How can we miss eating gajrela on Eid when carrots are available ? So, i m bringing an irresistible gajrela recipe which will satisfy your sweet tooth. Make it little fancy by garnishing it with chocolate ganache For your kids attention. Ingredients:

-Carrot 1 kg ( Gajar )
-Khoya 1/2 cup
-Sugar 1 ½ cup
-Milk 4 liter
-Rice (soaked & crushed) 1/2 cup
-Cardamom powder 1 tbsp
-Almond (chopped) 3-4 tbsp
-Pistachios (chopped) 3-4 tbsp
-Raisins 3 -4 tbsp ( Kishmish )

Ingredients for chocolate ganache:

-Chocolate (chopped) 1/2 cup
-Unsalted Butter 1 tbsp
-Cream 1/4 cup

Directions:

-Take carrots and grate them with help of a grater. Set aside.
-Then boil milk in a pan add carrots, socked rice and cook on a low flame for 15 -20 minutes. Keep stirring, then cover and cook for 30-40 mints on medium low flame.
-Then add the green cardamom powder and sugar and let it cook for 15 minutes more on low flame.
-Add almonds , raisins , pistachio mix well and again cook it for 15 -20 mins.
-Now when the carrot softens, add in khoya, mix in everything together.
-Cook until thickened.
-Keep stir until completely cool .
-Take it out in dish and let it chill before serving.

For chocolate ganache in a double boiler add chocolate, butter and stir continuously. Then add cream and mix it well until smooth. Your chocolate ganache is ready, let it chill before using.

-Drizzle chocolate ganache on gajarela, garnish with almonds and pistachio.
-Your delicious gajarela is ready to serve.
-Enjoy with your family and friends.
