Secret Recipe: Keto Egg Custard Tarts

Tart Crust Recipe:

1 3/4 cups of almond flour
4 tablespoons of granulated erythritol
A pinch of salt
5 tablespoons of melted coconut oil
1 large egg

Custard Filling Recipe:

1 3/4 cups of coconut cream
A pinch of salt
3 tablespoons of granulated erythritol
2 teaspoons of vanilla extract
½ tablespoon of unflavored powdered gelatin dissolved in 2 tablespoons of water
6 large egg yolks
1/2 teaspoon of ground cinnamon for topping

THE PROCESS

Prepare all ingredients and preheat the oven to 350°F.

Combine the dry ingredients for the crust in a bowl, then gradually incorporate the wet ingredients until achieving a crumbly consistency.

Press the crust mixture firmly into a pie pan, tart shells, or cupcake tray. For smaller tarts, ensure an even distribution of the crust mixture. Bake for 10-12 minutes until lightly golden brown. Remove from oven and let it cool completely.

Once the crust is cooled, focus on the custard. In a saucepan, combine coconut cream, erythritol, vanilla extract, and a pinch of salt. Simmer over medium heat for 8-10 minutes, then remove from heat.

Activate the gelatin by sprinkling it over cold water and allowing it to sit for 3-4 minutes.

In a separate bowl, whisk the egg yolks until they become light and creamy. Gradually pour the hot coconut cream mixture into the egg yolks while continuously whisking until smooth.

Return the custard mixture to the saucepan over low heat. Add the bloomed gelatin and whisk consistently for 4-5 minutes until thickened. Pour the custard mixture into the prepared tart shell(s) and refrigerate for at least 2 hours before serving. Enjoy your delicious creation!
