Degi Yakhni Pulao,Gosht ki yakhni pulao
Degi Yakhni Pulao is a flavorful rice dish from the subcontinent, particularly popular in North India and Pakistan. Here's a basic recipe:
Ingredients:
- 2 cups basmati rice
- 500g mutton,Beef or chicken pieces
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 cinnamon stick
- 4 green cardamom pods
- 4 cloves
- 1 bay leaf
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1/2 tsp black peppercorns
- 1/2 tsp turmeric powder
- 1/2 tb Dahi
- Salt to taste
- 4 cups water
- 3 tbsp ghee or oil
- Fresh coriander leaves for garnish
- Fried onions for garnish (optional)
Instructions:
1. Wash the rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
2. Heat ghee or oil in a large pot over medium heat. Add the sliced onions and fry until golden brown. Remove half of the fried onions and set aside for garnish.
3. Add the whole spices (cinnamon, cardamom, cloves, bay leaf, cumin seeds, coriander seeds, and black peppercorns) to the pot and sauté for a minute until fragrant.
4. Add the minced garlic and grated ginger, and sauté for another minute.
5. Add the mutton ,Beef or chicken pieces to the pot and cook until browned on all sides.
6. Add Dahi, black pepper powder, and salt to taste. Mix well.
7. Pour in the water and bring it to a boil. Then reduce the heat to low, cover the pot, and simmer for about 30 minutes or until the meat is tender.
8. Once the meat is cooked, add the soaked and drained rice to the pot. Gently stir to combine with the meat and spices.
9. Cover the pot again and cook on low heat for about 15-20 minutes or until the rice is cooked and all the water is absorbed.
10. Once done, fluff the rice with a fork and garnish with the reserved fried onions and fresh coriander leaves.
11. Serve hot with raita or your favorite side dish.
