How I Concassé Tomatoes and Make My Tomato and Zucchini Casserole
In this video, Ken shows how he concassés #tomatoes. The term "concassé" is a French term meaning roughly "to crush" as in making a sauce. In America, the term is used culinarily to mean any of the steps used in the French process. Thus, it can refer to (1) the process used to peel produce in this French process (2) the process of peeling, deseeding, and rough chopping produce or (3) the process of peeling, deseeding, rough chopping, and grinding produce. For this video, Ken is referring primarily to the first definition as he does not deseed the tomatoes. Later, Ken shows how to use what you have on hand, as he does a second #cooking element to this #cookingvideo, by making a #tomato and #zuchinni #casserolerecipe.

Ken's Tomato & Zucchini Casserole
3 lg. Tomatoes, Peeled & Chopped
6 Zucchini, Chopped
1 med. Yellow (Spanish) Onion, Peeled & Chopped
~ 6 c. Stale French Bread, Cubed
6 tbsp. Salted Butter
2 tbsp. Cooking Oil
4 tbsp. Extra Virgin Olive Oil
1 tbsp. Toasted Sesame Seed Oil
@McCormickVideos Peppercorn Grinder, to Taste
Sea Salt, to Taste
~1/2 tsp. Monosodium Glutamate (MSG), to Taste
1/2 to 1 tsp. Paprika, Optional (Hungarian Sweet Paprika Preferred)
Garlic Salt, to Taste
Place 2 tbsp. butter and 2 tbsp. cooking oil in a large pot and melt together on medium-high heat. Add in the tomatoes and cook until they start to break down. Add in the onions and cook until the onions turn translucent. Season with peppercorn medley, salt, MSG, and paprika. Add in the zucchini and cook until they are tender and cooked through. Taste and adjust for seasoning. In the microwave, melt the remaining butter. After the butter is melted, add the sesame oil and olive oil. In a bowl or on a sheet tray, place the bread and drizzle the oil blend over the bread and toss well to make sure every piece is thoroughly coated. Season the bread well with garlic salt, tossing to insure the bread is well coated. Preheat an oven to 350°F (177°C). Butter a casserole dish (in the video, Ken used a 3 quart casserole dish but you can use a smaller one if you want more veggies to bread. If you use a smaller casserole dish, you will need to cut back on seasoned bread cubes used.). Bake the casserole for 20-30 minutes or until the bread is uniformly toasted. Remove from the oven and let sit 10 minutes before serving.
