Hello my friends and welcome to another video. Today we will cook a delicious and healthy dish, wild rabbit stew. Wild rabbit is a meat rich in protein and low in fat, which goes perfectly with the sauce of onions, tomatoes and herbs. To prepare the wild rabbit, we should clean it well, removing the intestine and any hair. Then, cut it into pieces and put it in a bowl with a little vinegar. We leave it there for about an hour, and at the end we rinse with water. This is the first step to make wild rabbit stew, a traditional and tasty dish that will delight you.

When we are ready, we can saute the rabbit in a pot with olive oil and let it burn.

We will wait for it to brown on one side and we will turn it on the other side to get a nice color.
Then we will add two large chopped onions. When we finish sauteing we will cover with water. At this point we can salt and pepper and add our herbs.

Then add salt, pepper, sweet paprika, a tablespoon of sugar, and two spoons of tomato paste.

The herbs that will take off our food and bring it to another level are allspice and cinnamon stick.

We will cover and let our food boil for an hour to an hour and a half depending on the quantity and the fire, and when needed we will add water.
But until the food boils we go to clean our onions, I put them whole and to make them boil easier I cut them crosswise and sprinkled water. We will cover them and let them boil. Our bunny is ready, let's go bone it when it cools down. Here we can see how well the rabbit and onions are cooked. bon appetit!!
