Brown Stew is a lot like fricassee chicken. There are two significant variations, though. The chicken for fricassee is not sliced as small as it is for brown stew; instead, it is cut into tiny, "bite-sized" pieces. In fricassee chicken, the chicken is fried almost completely before a liquid is added to "stew" the chicken down for a brief while. This is the second distinction. Brown stew chicken is cooked for a very long time by stewing it in extra liquid after a brief sautéing phase.
