Recipe
Makes 10 muffins
Wet:
3 medium ripe bananas
6 tbsps maple syrup
1/4 cup oil (olive, or avocado)
1/2 tsp vanilla extract
Dry:
2 1/2 cups almond flour
1/2 cup arrowroot flour (tapioca starch would also work)
1/2 tsp sea salt
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
Handful of cacao nibs - optional
Combine all the dry ingredients in a bowl.
In a blender, purée the wet ingredients until there are no banana chunks left. Alternatively, you can mash banana then mix into the other wet ingredients.
Stir wet ingredients into dry ingredients.
Spoon into greased or lined muffin cups. We sprinkled our muffins with cacao nibs and added a slice of banana.
Bake at 350F for 25-30
minutes, or until risen and golden.
Feel free to cut maple syrup with apple sauce and if you don't have tapioca starch add an extra 1/2 cup almond flour, remove half of the banana and add 1 egg!
