Lactic Cheese
1 gallon milk (NOT homogenized)
.25 tsp calcium chloride
3 drops rennet
unchlorinated water
mesophillic starter A
Heat the milk to 80
add calcium chloride
Add starter let sit 2 minutes
Add rennet
let stand 12-16 hours
Strain and hang 6-8 hours
Mix with salt
enjoy like cream cheese
