Is everyone enjoying Molto March? It's where I post a bunch of lost episodes of the 90's Molto Mario TV show. Today we're talking olive oil grading. It's based on acidity, dontcha know. And they NEVER let an olive hit the ground in Italy. Gives a neat explanation of cold pressed olive oil as well. To test the olive oil you rub it on your wrist, give it a sniff, and give it a lick. We then begin the process of making the south of France dish tapenade. He will use it in some upcoming episodes, or you can simply dip your bread in it.
