Here's a simple recipe for mixed vegetable pakoras:

### Ingredients:
- 1 cup gram flour (besan)
- 1 small potato, thinly sliced
- 1 small onion, thinly sliced
- 1/2 cup cabbage chopped
- 1/2 carrot chopped

- 1/4 cup chopped cilantro (coriander)
- 1-2 green chilies, finely chopped (optional)
- 1 teaspoon ginger-garlic paste
- 1 teaspoon carom seeds (ajwain)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder

- Salt to taste
- Water, as needed
- Oil for deep frying

### Instructions:
1. In a mixing bowl, combine gram flour, ginger-garlic paste, carom seeds, turmeric powder, red chili powder, garam masala, and salt. Mix well.
2. Add water gradually to the flour mixture to form a smooth, thick batter. The consistency should be thick enough to coat the back of a spoon.
3. Add the sliced vegetables (potato, onion, cabbage carrot, and cilantro) to the batter. Mix until all the vegetables are well coated.
4. Heat oil in a deep frying pan or kadhai over medium heat.
5. Once the oil is hot, drop spoonfuls of the vegetable batter into the hot oil, making sure not to overcrowd the pan.
6. Fry the pakoras until they are golden brown and crispy, turning occasionally to ensure even cooking.
7. Once cooked, remove the pakoras from the oil using a slotted spoon and drain them on paper towels to remove excess oil.
8. Serve the mixed vegetable pakoras hot with green chutney or ketchup.
