48oz Prime Porterhouse sous vide for 2 hours @ 132 then finished in cast iron. Marrow bone w sea salt & thyme roasted in the oven & buttered crostini, baked potato topped w creme freche & pancetta, a slice of Roquefort & a smear of Dijon. 2 forks for good measure.
