2 large eggplants, sliced lengthwise into thin strips

1 lb ground lamb or beef
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon

1 can (14 oz) crushed tomatoes
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander

Instructions:

Preheat the oven to 400°F (200°C).

Brush the eggplant slices with olive oil and season with salt and pepper. Place on a baking sheet and roast in the oven for 15-20 minutes, or until tender.
