1 cup cooked brown rice
1 cup canned black beans, drained and rinsed
1 cup diced tomatoes
1 cup diced bell peppers (any color)
1 cup diced onion
1 cup corn kernels (fresh or canned)
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper to taste
4 large whole wheat tortillas
Optional toppings: avocado slices, chopped cilantro, vegan cheese, salsa, and vegan sour cream
