Lab-e-Shireen Recipe
Ingredients:
• 1 liter whole milk
• 1/2 cup sugar
• 3 tablespoons vanilla custard powder
• 1/2 cup milk (for custard)
• Strawberry jelly packet
• Vermicelli (colored)
• 1 cup mixed fruit cocktail (canned)
• 2 cup whipping cream 35pct
• Assorted dry fruits (e.g., almonds, pistachios, walnuts, cashews, raisin) for garnish
Instructions:
• Boil Milk: In a large pot, bring 1 liter of whole milk to a boil. Once it boils, reduce the heat to low.
• Add Brown Sugar: Stir in 1/2 cup of brown sugar and let it simmer for a few minutes until the sugar dissolves completely.
• Prepare Vanilla Custard: In a separate bowl, mix 3 tablespoons of vanilla custard powder with 1/2 cup of milk to form a smooth paste.
• Thicken Custard: Slowly pour the custard mixture into the pot of simmering milk, stirring continuously to avoid lumps. Allow it to cook until it reaches a thick consistency, stirring occasionally. Once thickened, remove from heat and let it cool slightly.
• Prepare Strawberry Jelly: While the custard is cooling, prepare the strawberry jelly according to the instructions on the packet. Once prepared, let it cool to room temperature.
• Boil Vermicelli: In another pot, boil water and cook the colored vermicelli according to the package instructions. Once cooked, drain and set aside.
• Assemble Lab-e-Shireen: In a large serving bowl or individual serving plates, pour the prepared strawberry jelly and let it set in the refrigerator for about 1 hour.
• Prepare Custard Cream: Take out the slightly cooled custard from the pot and transfer it to a mixing bowl. Add whipped cream and mix well until you achieve a smooth and creamy consistency.
• Add Ingredients: To the creamy custard mixture, add the mixed fruit cocktail along with the boiled vermicelli. You can also add your choice of assorted dry fruits for extra flavor and texture.
• Final Touch: Pour the custard mixture over the set jelly layer in the serving bowl or plates. Smooth the top with a spatula for an even finish.
• Chill and Serve: Refrigerate the assembled Lab-e-Shireen for a few hours until it sets completely. Once chilled, garnish with additional dry fruits if desired and serve cold.
