Sugar Free, Gluten Free Vanilla Cup Cake Recipe

Ingredients:
1/2 cup (99g) coconut oil
2/3 cup (131g) granulated sugar
1/2 teaspoon table salt
2 teaspoons gluten-free vanilla extract
6 large eggs, whisked
2 tablespoons (28g) milk
1/2 cup (64g) coconut flour
1 teaspoon baking powder
Instructions:
Preheat the oven to 350°F. Line a 12-cup muffin pan with 10 paper cupcake liners and grease them.

In a bowl, beat together oil, sugar, salt, vanilla, and eggs. Add milk and whisk until smooth.

In a separate bowl, sift coconut flour and baking powder. Add to the wet ingredients, stir to combine.

Divide batter among 10 liners, filling each 3/4 full.

Bake on the center rack for 18 to 20 minutes or until a cake tester comes out clean.

Remove from the oven, cool in the pan for 5 minutes, then transfer to a rack to cool completely.

Frost the cupcakes.

Sugar Free Frosting Recipe
1 cup butter
8 ounce cream cheese (optional)
3/4 – 1 cup Swerve confectioner’s sugar
1 teaspoon vanilla extract
Heavy whipping cream as needed for consistency
