Guilt Free - Chocolate Chip Cookie Bars Recipe:
Ingredients:
(2 sticks) plant butter, softened
1/2 Cup - Cold Pressed Coconut Oil
1/2 cup zero calorie sugar substitute ( SWERVE or WHOLE EARTH )
1/2 cup packed light brown sugar
2 large eggs
1 tablespoon vanilla extract
3 cups Gluten Free Baking Flour ( can use coconut flour or almond flour or a mixture of both as well. )
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chocolate chips- ( no sugar added chips )
1 cup chopped nuts (optional)

Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan.
Cream Butter and Sugars:

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add Eggs and Vanilla:
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Combine Dry Ingredients:

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in Chocolate Chips and Nuts:
Gently fold in the chocolate chips and chopped nuts (if using) until evenly distributed in the dough.

Press Into Pan:
Press the cookie dough evenly into the prepared baking pan.

Bake: Bake in the preheated oven for 25-30 minutes or until the edges are golden brown, and a toothpick inserted into the center comes out with moist crumbs (not wet batter).

Cool and Cut:
Allow the cookie bars to cool completely in the pan before cutting into squares or bars.
