Crispy Dal Vada with Flavorful Chutney
Indulge in the delightful crunch and rich flavors of crispy dal vada, a beloved Indian snack that pairs perfectly with tangy chutney. This recipe combines the earthy goodness of lentils with aromatic spices and fresh herbs, creating a mouthwatering treat that's sure to satisfy your cravings.
Ingredients:
For Dal Vada:
1 cup dal (lentils), soaked for 3-4 hours
Salt to taste
half teaspoon cumin powder
1 teaspoon chat masala
2-3 green chilies, finely chopped
Handful of coriander leaves, chopped
Handful of green onion leaves, chopped
Oil for deep frying
For Chutney:
Handful of coriander leaves
2-3 green chilies
1/2 teaspoon black salt
Salt to taste
2 tablespoons aloo bhujiya (potato sev)
Juice of half lemon
Instructions:
Prepare the Dal:
After soaking the dal, drain the water completely.
Grind the dal into a coarse paste without adding water. It should be slightly grainy in texture.
Mixing the Ingredients:
In a mixing bowl, combine the ground dal with salt, cumin powder, chat masala, chopped green chilies, coriander leaves, and green onion leaves. Mix well to incorporate all the ingredients evenly.
Forming Vadas:
Take a small portion of the dal mixture and shape it into a small round vada. Flatten it slightly with your palm.
Frying the Vadas:
Heat oil in a deep frying pan over medium heat.
Gently slide the prepared vadas into the hot oil, frying them in batches.
Fry until they turn golden brown and crispy on both sides.
Remove the vadas from the oil using a slotted spoon and place them on paper towels to drain excess oil.
Preparing the Chutney:
In a blender, combine coriander leaves, green chilies, black salt, regular salt, aloo bhujiya, and lemon juice.
Blend until you get a smooth chutney-like consistency. Adjust the seasoning according to your taste.
Serving:
Serve the hot and crispy dal vadas with the flavorful chutney on the side.
Enjoy the combination of crunchy exterior and soft interior of the vadas, complemented by the zesty kick of the chutney.
Note: These dal vadas are best enjoyed fresh and hot, straight out of the frying pan. Serve them as a delightful snack for gatherings or enjoy them as a tasty accompaniment to your evening tea.
