After days of festive foods, I will always crave simple veggie-based dishes. This Skillet Roasted Cabbage Wedges with Garlic & Pickled Green Bird's Eye Chillies Dressing is one of our latest crazes. They are really good on their own or even as a rice dish alone if you are not on a no-carb. diet. Just cabbage as the main ingredients and chopped garlic, pickled green bird’s eye chilies, cilantro, and butter as the base ingredients for the dressing. No soup stocks are needed, as the garlic and pickled chillies are enough to highlight and enhance the dressing sauce. If you do not have pickled green bird’s eye chillies, you can try using capers; it will be different though. Try them out, and let us know how you like them.

Cabbage: 2 or more wedges

DRESSING
garlic, chopped, about 1.5–2 Tbsp
pickled green bird’s eye chilies
cilantro, a handful
vegan butter or butter, 1/2 Tbsp
sea salt flakes, to taste
freshly ground black pepper to taste
water, about 1/4 cup
