Quick & Easy Recipe, Scrumptious Chicken Stir-Fry with Veggies over Rice

An easy dish to prepare - scrumptious chicken stir-fry with veggies (chef's choice) over a bed of rice. Our Veggie Chopper was very helpful in preparing the veggies. Here is a Veggie Chopper amazon link - https://amzn.to/3UxAwNj The sauce is made of chicken broth, soy sauce and ginger thickened with corn starch. When using an electric skillet always plug in the gadget into the skillet before plugging the cord into the outlet.

CHICKEN STIR FRY
3 lbs. boneless chicken breasts - cut in bite sized pieces and marinated in soy sauce for about 2 hours
2 TBLS olive oil

Pour oil in hot skillet
Cook chicken for 3-4 minutes, stirring occasionally

Add chopped veggies of your choice
Some veggies take a little more cooking time so add those first
We used the following -
1 cup onion
2 bell peppers
2 cups carrots
1 cup fresh broccoli
16 oz frozen peas
Add salt & pepper if desired
Cook until done, stirring occasionally
(we added the peas last so they would be just a wee bit crunchy yet)

Mix together well:
3 cup chicken broth
2 TBLS soy sauce
1 tsp ginger
7 TBLS corn starch
Pour into skillet with chicken and veggies
Cook until thickened

Remove from heat and serve over a bed of rice
