Introduction:
B.E.C. Breakfast Skillet is a hearty and delicious one-pan meal that combines crispy bacon, scrambled eggs, and melted cheese for the ultimate breakfast experience. With minimal prep and cook time, this skillet dish is perfect for busy mornings or lazy weekends when you want a satisfying breakfast without a lot of fuss.

Ingredients:

6 slices bacon, chopped
6 large eggs
1/4 cup milk
Salt and pepper, to taste
1 cup shredded cheddar cheese
2 green onions, thinly sliced (optional)
Cooking spray or butter, for greasing

Instructions:

Cook the Bacon:

Heat a large skillet over medium heat. Add the chopped bacon and cook until crispy, stirring occasionally, about 6-8 minutes. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease.

Prepare the Egg Mixture:

In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.

Scramble the Eggs:

Return the skillet to the stove and reduce the heat to low. If needed, drain any excess bacon grease, leaving about 1 tablespoon in the skillet.
Pour the egg mixture into the skillet and let it cook undisturbed for a minute or two until the edges start to set.

Using a spatula, gently push the eggs from the edges towards the center of the skillet, allowing the uncooked eggs to flow to the bottom of the skillet.
Continue to cook and gently scramble the eggs until they are just set but still slightly creamy. Remove the skillet from the heat.

Add Bacon and Cheese:

Sprinkle the cooked bacon evenly over the scrambled eggs in the skillet.
Sprinkle the shredded cheddar cheese over the bacon and eggs.

Finish and Serve:

Return the skillet to low heat for a minute or two, just until the cheese starts to melt.
Garnish with thinly sliced green onions, if desired.
Serve the B.E.C. Breakfast Skillet hot directly from the skillet, with toast or English muffins on the side if desired.
