Making Italian pizza dough from scratch WITHOUT KNEADING 🍕

In this video I'll show you how to make fluffy pizza dough and how to make thick pizza dough.
I give you recipe and method plus oven guidelines and the 𝐞𝐱𝐚𝐜𝐭 𝐬𝐭𝐞𝐩 𝐛𝐲 𝐬𝐭𝐞𝐩 𝐭𝐢𝐦𝐞𝐥𝐢𝐧𝐞.
It's an high hydration pizza dough, perfect to make sicilian pizza, that is similar to what we call Pizza in teglia in Italy (or pizza al taglio, pizza a taglio).
This is a NO KNEAD dough, only folding is involved 🥳

The doses I used in this video (with baker's percentages):
193 grams flour (100%), at least 12.5% protein content
145 grams room temperature water (75%)
4.25 grams salt (2.2%)
0.97 grams dry yeast (0.5%)
