Just add eggs to potatoes. Only a few ingredients. Simple and delicious potato breakfast recipe

Ingredients:
2 potatoes
Olive oil
½ Onion
Salt and black pepper
A pinch of crushed red pepper(optional)
3 Eggs
50g Mozzarella cheese

Recipe:
Dice 2 medium peeled potatoes
Medium heat
Pour olive oil in the pan
Add the potatoes into the pan
Fry for about 5 minutes
Chop 1/2 onion
Add to the pan
Fry for two additional minutes
Add salt and black pepper
Add a pinch of crushed red pepper
Crack 3 eggs in a bowl
Add salt and black pepper
Mix well
Pour into the pan, on top of the potatoes
Grate 50g mozzarella cheese
Sprinkle the cheese on top
Sprinkle parsley on top (optional)
Fry for 3-5 minutes
